These cookies are insane…ly good.
I was getting caught up on one of my favorite vegan blogs written by an adorable young gal called Celery in the City and I came across her recipe for a cookie-fied version of chocolate-covered peanut butter-filled pretzels. These being a guilty pleasure snack of mine anyway, I was taken with the idea of replicating the flavor in the world’s second best dessert (the best being pie, of course).
So I finally tried it after thinking about it nonstop for a week.
The result? Magic. Pure magic. They are salty, sweet, soft, crunchy, chocolatey….delicious…everything one could want in a cookie.
I like how the little pretzel pieces stick out and retain their pretzel crunchiness in the process. In her recipe, she suggests topping the cookies with sugar. I sprinkled a little sea salt on mine to add a little more oomph to the salty bit. I also added more chocolate chips than the recipe called for because I don’t mess around when it comes to chocolate.
I do have one note of caution for these: you will be tempted to eat waaaaaay too many of them at once. Way too many.
