Busy weekend!

There has been a lot going on both in and outside of Lishy’s kitchen. We had a great weekend out here on the prairie! I managed a couple of good workouts at the gym, Cam and I tackled a few big organizational tasks we had around the house, worked on some wedding plans and even got out for a little social activity.

I don’t have a recipe to post quite yet, but this week I will put up the recipe for a winter salad that I made for Cam to take to our Co-op potluck on Sunday.

It turned out very well! this has been one of my favorite dinners to make over the past few months as kale, squash, root veggies and other cold-weather delicacies have been in season.

In other news, the students are definitely back on campus. The roads are busier. Lines longer at the grocery and local retailers, empty red solo cups have begun appearing on the sidewalks on campus again… I forgot what it’s like to live in a college town. That, and the gym was out-of-control busy. Usually that tapers off after the semester really gets going, but it’s annoying in the interim!

The biggest development, however, is the addition of a new family member to our little home.

Presenting….

Annie and the tail that never stops wagging!

This is Annie. She is a Cairn terrier mix. She is a little lady–under 10 lbs and is about 8 years old. She comes to us from the Hope Floats Rescue in North-Central IL. She’s a sweetie with a past that has been fraught with some anguish.

We are so excited to have her in our home! Here’s hoping the only discomfort she experiences for the rest of her days is the occasional bath and having to go outside to do her business in unpleasant weather.
