Milk and toast and honey…

I’m not exactly having a Chelsea Morning, but this is such a happy Sunday morning song with some rich imagery. I love Joni Mitchell.

Sunday mornings are the best time to be lazy. It’s a time for reflection, worship of a god–be it in the traditional sense or in the form of coffee, a laptop or a television screen. For me, it tends to be the one time of the week when I get to indulge a little–make a big breakfast, have a quiet hour to myself while Cam and Fluff snooze, or get a jump-start on the week.

In the spirit of indulgence and laziness, I give you a quick recipe for a delicious beverage that will make any Sunday morning a little cozier…

Pumpkin Pie “Latte”

What you’ll need:

6-8 oz of your favorite coffee or tea (plain black tea or early gray is probably best, but plain green tea would probably work as well)

1 Cup milk (cow, soy, almond)

1/2 tsp Vanilla Extract

1/4 tsp Cinnamon

1/4 tsp Nutmeg

pinch each of ground ginger and ground clove

1 Tbs Honey or agave nectar

What to do:
In a small bowl, combine all of the ingredients except the coffee/tea and blend thoroughly (I use a hand blender, but a quick zap in a food processor or a few minutes by hand with a whisk would work too). Pour into a small saucepan and bring to a soft boil. In the mean time, fill two standar mugs approximately half way with hot tea/coffee. Remove milk mixture from heat; pour evenly into each mug holding back the foam with a spoon and scooping it on top of each mug when the liquid is divided.

If you are like me and dig a monster mug o’warm beverage in the morning, this can easily be used for just one mug. Otherwise, it’s easy to half or double the recipe depending on the crowd.
