Easiest Ever Vegan Chocolate Cake

In a recent post, a friend asked whether I had any good vegan treats up my sleeve.

I am a total sugar hound myself and have found ways to make healthier versions of some classic desserts. In this post, I am sharing the easiest chocolate cake recipe ever. Vegan or not. In this case, it’s vegan, hence the name…

Easiest Ever Vegan Chocolate Cake

What you will need:
1 1/2 cups all purposed flour
3/4 cup granulated sugar
1/2 tsp salt
1 tsp baking soda
1/4 cup unsweetened cocoa powder
2 tsp vanilla extract
1/2 cup applesauce (or fruit sauce of your choosing)
1 Tbs white distilled vinegar
1 cup cold water

What to do:
Pre-heat oven to 350 degrees; lightly grease bundt pan, 9″ springform pan, or muffin tins (for cupcakes).

Combine flour, sugar, salt, baking soda and cocoa in a bowl until thoroughly blended. Create a well in the center of the dry ingredients, add the vanilla, oil, vinegar and water. Mix until just combined–careful not to overdo it! Pour into selected pan and bake in preheated oven until a toothpick inserted into the center comes out clean. If making cupcakes, check to see if they are done after 15 minutes.

Cool on a wire rack, remove from pan and dust with confectioners’ sugar and top or frost as you like.

Variations: For an extra kick, add a 1/4 -1/2 tsp of chili powder for a chili-chocolate cake, or add 1/2 tsp ginger powder or 1/2 tsp cinnamon for another spicy twist. For an extra punch of chocolate, fold a cup of vegan chocolate chips into the batter before pouring into the pan and baking.

Fun Fact: 1 tsp of spices such as cinnamon, ginger or cayenne pepper contains a gram of fiber. Ginger also helps the body fight inflammation and cinnamon is good for the heart. All three spices help boost metabolism and aid in digestion.

On its own, the cake is good. It’s moist and delicious to slice and eat as soon as it cools. However, sometimes we really want a serious piece of cake, icing and all! Under such circumstances, Earth Balance is our BFF. Here are two frosting recipes that will take the cake!

Chocolate Nut Butter Icing:

What you will need:
1/2 cup natural nut butter (peanut, cashew, almond)
1/3 cup unsweetened cocoa powder
1/3 cup non-dairy milk (soy, rice or almond is fine, but I like coconut for things like this)
2 cups sifted confectioners’ sugar
1/2 tsp vanilla extract

What to do:
Cream together the cocoa, peanut butter, vanilla and most of the milk. Slowly add the sugar while continuing to whip the mixture. Once the sugar is fully combined, add in the remaining milk to ensure a good spreading consistency. If the mix is too stiff, add a little extra milk, if it is too runny, add a little extra sugar until the balance is just right.

Coo Coo for Coconut Icing:

What you will need:
1/2 cup Earth Balance (or non-dairy butter product of choice)
1/3 cup coconut flakes
1/4 cup nondairy milk (soy, rice or almond is fine, but I like coconut for things like this)
2 cups sifted confectioners’ sugar
1/2 tsp coconut flavoring/extract

What to do:
Cream together the butter and coconut flavoring. Slowly add the sugar while continuing to whip the mixture. Once the sugar is fully combined, add the milk. Once icing is fully mixed, sprinkle in the coconut flakes and combine thoroughly. (For when you feel like a nut: once you frost the cake/cupcakes with this icing, sprinkle top with coarsely chopped, oven-toasted almonds)

I have not made either of these variations in awhile, but I do have some photos from previous vegan baking adventures. Please excuse the poor cell phone photo quality!

As with any other recipe tagged “kinda naughty”, these recipes are healthier versions of going to get a big slab o’somethin’ at the local Cheesebake Pieshopatorium, but they are not health food. It’s still cake and icing. But they offer a chance to bend the rules a little without totally shattering them.

  2. Awesome! Although I am not sure I could go all vegan I am sure it is a lot healthier in some instances!
    I just bought this awesome cookbook too…Eat what you love…that has great variations in it…like mashing califlower instead of potatoes…super excited to try that!
